The nutritionist offers food exchange suggestions, and the program tracks carbohydrates, calories, and other necessary data for managing diabetic diets. Ken Hom offers a tasty alternative to the standard stuffed pepper with this exciting aubergine and chilli mix

Ingredients
30ml extra virgin olive oil
2 Romano peppers, cut in half lengthways
1 red onion, cut into small chunks
3 sprigs of thyme
1 small aubergine, cut into small cubes
8 tiny vine tomatoes
1 pack Ken Hom cooks…Vegetable Nasi Goreng Rice
1 jar Ken Hom cooks… Chilli & Garlic with jalapeno peppers

Method

Serves 2

Drizzle the oil into a shallow ovenproof pan. Add the red onion, thyme sprigs, vine tomatoes and aubergine. Season and roast at 200oC /Gas Mark 6 for 15-20 minutes until just tender and roasted.

Mix together the rice and roasted vegetables. Add 45ml of Ken Hom cooks… Chilli & Garlic with jalapeno peppers. Fill the peppers with the mixture. Place on the hot barbecue for 5-8 minutes, then cover with foil or use the barbecue lid.

Serve with any remaining rice and chilli and garlic sauce.

My husband is gone for at least 13 hours a day a least 3 days a week and I have a new born. It’s hard to find time to take a shower much less eat decently. I want to eat healthy so my baby will be health, and start good habits. I wanted to know if there is a cookbook or website that has simple meal ideas that doesn’t make huge portions and doesnt take long to make.

This country has always been very near and dear to its citizens. However, its citizens have not been the best for it. America has always been the land of oppurtunity, freedom, liberty, justice, and wealth. As a citizen of this exquisite country I must ask about the future of our country and its reputation among the world. With everybody worried about minutes instead of hours, and hours instead of days, the tempo of society is hastening and I fear that our priorities are mixed up. Rather than worry about ourselves we’re worried about the Middle East, as if another Cold War is on our hands. Instead of worrying about the economy we’re worried about celebrities. And instead of eating healthy home cooked meals which secure the fabric of families and home life, we eat McDonalds, stay out to endless hours of the night working, and pay ridiculous taxes which only go to secure companies who practice faulty business practices at best. We aren’t getting the justice which we deserve from a government which has been oppressive, perhaps the most oppressive we’ve ever seen. With everything snowballing rapidly downwards our reputation as the saviors of the world has been tarnished into one of laziness and hatred. We hate others, yet embrace them to come to America; we hate immigrants, yet force them to work for us, and for cheaper than we would ever accept; we sit on our fat lazy asses and demand the government take care of us, yet we peach anti-communism like its our jobs; in short our morals, priorities, and standards have shifted from that of a great country to that of an arrogant country. What happened to the land of the free? What happened to roads paved with gold? What happened to our country?

I agree with everything you just said. Be prepared for all the "God bless America" people to call you a traitor and tell you to go live in France. Which is exactly the problem. First of all, I think Americans need to realize that yes we are citizens of the U.S. but also citizens of the world. We cannot strut around like the all powerful big brother and demand respect from countries who frankly have their rights to not want to be like us. Greed is a disgusting thing and I think that is what has happened. We cannot trust our food because some big wig at the FDA has it in with some big wig at kraft or something so there fore our food is not up to standards. Our medical system is a joke, I mean past the whole health insurance crisis. You never quite know if a drug has really been tested, or if a procedure is really safe in the long run (don’t get me started on this.)
Americans have a lot at their fingertips but yet choose to entertain themselves with Paris Hilton’s new BFF rather than learn about the world they live in.

Every country has had its fall, and we are adolescence compared to some other countries, so we may just need to learn things the hard way.

My dad loves to make my family dinner. Its our tradition that we all eat the meal together that he made. But the thing is, he really doesn’t care about nutrition or if it’s healthy. I really want to shed some pounds, and when I tried in the past, I failed, mainly I think because of my dads high fat dinners. So my question is… how should I tell him that his cooking is making me gain weight, without hurting him? I am very appreciative of his efforts, but I care a lot about my health now and in future. PLEASE HELP!

Excellent family tradition! Your father probably learned to cook way before we had so much information about nutrition and some many alternatives to choose from. He probably cooks the way he learned, as it is the only way he knows. I suggest that you start volunteering to be kitchen help, and tell your dad about your health concerns for yourself, him and the rest of the family. Then offer to work with him to learn ways to improve the nutrition levels of the dishes he already makes and explore new recipes. As far as gaining weight, that has more to do with portion control of what your are eating than it does what you eat. 3,000 calories of even healthy food will put weight on anybody.
I find loads of great recipes with sensible substitutions and nutritional information through the Cooking Light magazine and web site. It is a really balanced and sensible view of eating, cooking and general healthy lifestyle advice and help. They redo old family favorites and introduce new foods you may not even know about to try. Great place to start revamping the family diet. If you get involved in the learning process with your dad, he’ll likely be more willing to make changes. Not to mention he’d probably really love the company in the kitchen, and you will have the chance to spend time with him while you learn to cook and the old family recipes- updated of course!
