I’m going on a sensible diet for once, I want to enjoy this diet, eating healthy but nice food.. also enjoy cooking them!
Anyone know any good recipes?

Pasta Shells Florentine

1 package (10 ounces) frozen chopped spinach,
thawed, and well drained
1 cup shredded Mozzarella cheese
1 cup cottage cheese
1 egg (or just 1 egg white)
1 Tablespoon Parmesan cheese
1/4 teaspoon ground nutmeg
(don’t skip this – it really improves the taste)

16 Jumbo pasta shells (for filling)
cooked and drained

1 Jar (32 ounces spaghetti sauce

Heat oven to 375F. Mix spinach, mozzarella cheese, cottage cheese, egg, (or egg white) Parmesan cheese and nutmeg until well blended. Fill each shell with a heaping Tablespoon of spinach mixture. Place in a 9 x 12 baking dish that has been sprayed with release spray (Pam). Spoon sauce over the filled shells. Cover with foil.

Bake 30 to 40 minutes or until thoroughly heated.

Makes 4 servings

Garlic Roasted Lamb with Oregano Pesto

Servings [Reset] Keys : Healthy Lamb Meats Herbs
Ingredients :

2 lb Rolled boneless leg of lamb
1/4 cup Oregano pesto, divided
3 cl Garlic, sliced
1/4 tsp Salt
1/8 tsp Pepper
1 head garlic

Method :
Unroll roast and trim fat. Spread 1 tablespoon oregano pesto into the folds of the roast. Reroll roast and secure at 1" intervals with string. Make several 1/2" deep slits in surface of roast; stuff with garlic slices. Cut 3 additional 1/2" deep slits in surface of roast; stuff 1 tablespoon pesto into each slit. Spread remaining pesto over surface of roast and sprinkle with salt and pepper. Place roast on a broiler pan amd insert meat thermometer into the thickest portion of roast; set aside.
Remove the white papery skin of garlic, making sure not to peel or separate the cloves. Wrap the garlic head in aluminum foil.
Bake roast and garlic at 325F. for 45 minutes. Remove garlic from oven; set aside. Bake roast an aditional 40 minutes or until thermometer registers 150 degrees (medium rare). Let roast stand 10 minutes before slicing.
Separate head into cloves and serve with roast.
Makes 7 3 ounce lamb
servings.

I’d like to lose weight over this summer and I need some good, healthy recipes for good food that’s low in calories and possibly high in protein (doesn’t matter). I like carbs and meats, but not veggies :)
Any good, healthy recipes that are easy to cook? Thanks for your help!

Take a package of Boneless Skinless Ckn Breast Rinse them.
Pat dry.
Season them w/ what ever you like (I use salt, pepper, garlic pwd, onion pwd, & poultry seasoning)
Set aside
Take I cup of regular long grain rice. Mix w/1 can of fat free cream of mushroom soup & 1 can of water or chicken stock. (I mix the soup & stock 1st then add the rice.) Put in a greased pyrex dish. Cover with aluminum foil.
Bake @350 for 1 hour.
Take it out 1/2 way through & stir.
It is good re-heated also.

I am trying to change the way me and my family eat, but I’m need a cookbook with quick, easy and healthy receipes. I’m not the greatest cook in the world, but the food I make is eatible, my family has no compliant, but I want to cook healthy. In order to make a change I need some help. I’m looking for a cookbook with everyday meals that taste great, but are healthy for families on the go. Any ideas would be greatly appreciated. By the way my son is a very picky eater…he’s 8 years old….my husband is a picky eater too. My husband is not to good with change, but if it taste good he’ll try it. I love my family and I just want us to get better with the choice we make with food. I have to start somewhere for the sake of me and my family. Thanks a bunch!
